Apricot “LÄRABARS”

I’ve been eating, and LOVING, LÄRABARS for many years. They are such a clean, raw food with only two to five ingredients. It just never occurred to me to make them myself until a few months ago, and now I am obsessed! They are beautiful, simple to make, easy to take with you and a whole lot less expensive. It’s easy to change the ingredients using other nuts like walnuts, cashews, or peanuts, and other fruits like dried cherries, cranberries, or blueberries.

1½ cups raw almonds
1½ cup dried apricots
½ lb pitted Medjool dates
Water (just a touch, if necessary)

In a food processor, combine all ingredients, adding water, just a bit at a time if necessary, until the mixture is sticky. Line a sheet pan or baking dish with parchment paper. Press the mixture into a big flat sheet. Refrigerate for a few hours or overnight. Once firm, cut into bars. Wrap each bar in plastic wrap. Keep bars stored in the fridge and they should last for several weeks. Enjoy!
